Running at the right temperature protects your engine and saves you money at the pump. 

Automotive Cooling systems maintain the engine at a constant temperature, regardless of the ambient temperature outside the vehicle. If the engine runs too cold the fuel economy is impacted, too hot and the engine suffers damage and may even eventually self destruct.

The cooling system sends liquid coolant through the engine block and heads, picking up heat from the engine, cooling it. 

The heated fluid moves via a rubber hose to the radiator, to be cooled by the air coming into the engine compartment via the front grill.

Once cooled, the fluid is returned to the engine where it absorbs more heat and the process begins again. 

The water pump is responsible for keeping the fluid moving the system while the thermostat and bypass system recirculates coolant through the engine when the temperature drops below the design temperature.
